This is a Christmas cake design that I have wanted to do for ages. It comprises a number of elements some of which need to be made well in advance. For example, the cantilevered, run-out top needs 4 days to dry out thoroughly if it is to survive being lifted from the paper onto the cake – always the nerve-wracking part as it can crack easily. Makes sense to have a back-up spare but I didn’t have time – and fortunately it worked! The lamp standard is made up of 5 parts and iced together to form the 2-dimensional housing for the ‘candle’.
The cake is 12” diameter with the board larger than that to accommodate the lower design. Intend to develop these designs in 2013 for special occasion cakes, but for friends only as they are time consuming to create! The cake inside has predominant flavours of dates, lemon and fresh ginger, which is a refreshing change from rich fruit cake.

The best course to start with is ‘Brilliant Baking’ for pastries but these are full booked up till May. Then there will be a new list available.
